Baked Potato Rounds

I can’t believe that I have never heard or thought of this idea before.  It’s basically a recipe for super easy potato skins.  I saw it today over at make life delicious and can’t wait to try it.

Baked Potato Rounds (aka: Potato Slabs)

What you need -

2 Russet Potatoes
Salt to taste
Black Pepper to taste
Paprika to taste
1/3 cup Colby Jack cheese
5 slices bacon – cooked and diced
Green onions and sour cream if desired

Directions:

Preheat oven to 375. Clean and scrub potatoes well. Slice the potatoes into 1/4″ thick slices.

Place potatoes on lightly buttered baking sheet and season each side with salt, black pepper, and paprika.

Cook for 30 minutes. Flip potatoes over and cook for an additional 15 minutes.

Remove pan from oven and place a pinch of cheese and bacon on top of each potato round. Return the pan to the oven and cook until cheese is melted and bubbly, about 10 minutes.

Serve with green onions and sour cream, if desired.


I make potato skins a few times a year and a lot of work goes into them.  I have to scrub the potatoes, poke holes so they don’t explode, bake them in the oven, let them cool so I can handle them, cut them in half, scoop out the potato inside,  add the cheese and bacon and put them back in the oven to finish.  Then I have to make some sort of mashed potatoes so the insides I scooped out don’t go to waste.  This seems so much easier!

    Liz, have you made these yet? Our 8 yr old daughter has been anxious to do them, so we’ll be making them today. I’ll let you know how it goes! :)

    They were really, really tasty. Not too difficult. I used parchment paper, which is one of my new favorite things, to bake the bacon as well as the potato rounds. Makes for a much easier cleanup. I wouldn’t change a single thing about the recipe…down to the green onions and sour cream. Thank you for the recipe! I rarely go to a recipe, but this one and its pic looked too good to pass up. :)
