Some shopping and cooking

It was pretty much business as usual at Sam’s Club. I got some good deals and my regular staples. I try, but never seem to get out of there without spending a nice little chunk of our budget. That’s OK, I am very happy with the meals I am able to make from it.

I took the roast, sprinkled it with grill seasoning and browned it in a roasting pan on the stove top with a little olive oil. As it was browning I added one x-large onion sliced, a few pounds of potatos cut into large cubes and a pound of carrots. I let them brown as well.

Once the meat is browned on all sides I stick it in a 400 degree oven for 2-2 1/2 hours. Depends on the size of the roast and how well done you like it. I cook it so it’s a little undercooked in the center. We cut the well done meat off the sides, and leave the less cooked meat for the next meal (I’ll get to that in a minute).


At the last minute I add frozen peas that I left on the counter to thaw. They only need a few minutes to warm through. It’s a great meal that everybody loves. I cut up the remaining meat into cubes. Then I take all the leftovers and put them together in a pot and add tomato sauce. Voila, instant stew! Because the meat was undercooked it turns out moist and tender. I’ll serve it with rolls and have a whole different meal for later in the week, or freeze it for an easy make meal in the future.

I will also get 2 meals (and some extra for lunch) out of the chicken. I will grill some of it and make chicken cutlets out of the rest. I cook for 5 people and there is more then enough in these meals to go around.

That stew looks delicious. I’ve made roasts before, but never get through ‘em by myself. I like this idea of cooking it so that the center is a bit less done than the rest, to use in other dishes later!
